All smoked salmon is the same, right? Well, not quite. At Huon Salmon, we take even the most subtle details of our offering quite seriously. One such detail is the distinction to be made between cold and hot smoked salmon products.
Both are equally popular, but the distinction is this. Cold smoked salmon is typically cured in salt for a period of time before being subjected to smoke at temperatures below 25°C. Hot smoked salmon (or as we refer to it, wood roasted salmon) is typically brined and subjected to smoke at temperatures above 50°C.
Hot smoked salmon differs from its cold smoked variant in that it has been subject to temperatures sufficient to cook the fish. They tend to work beautifully when paired with creamier dishes and dips and take better to being heated than their cold smoked counterparts, as they have seen heat before.

Our state-of-the-art facility is outfitted with Reich Smokers and every process is overseen by our “Master Smoker” and his team of qualified and attentive process workers.
