All smoked salmon is the same, right? Well, not quite. At Huon Salmon, we take even the most subtle details of our offering quite seriously. One such detail is the distinction to be made between cold and hot smoked salmon products.

Both are equally popular, but the distinction is this. Cold smoked salmon is typically cured in salt for a period of time before being subjected to smoke at temperatures below 25°C. Hot smoked salmon (or as we refer to it, wood roasted salmon) is typically brined and subjected to smoke at temperatures above 50°C.
